This hot dip version of the Mexican Street Corn dish is always a crowd pleaser. Don’t be surprised if you don’t have any leftovers!

Ingredients

  • 3 cans Mexican or Fiesta street cornĀ 
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup cotija cheese, crumbled (optional)
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 Tbsp lime juice
  • 1/4 cup chopped fresh cilantro
  • salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Spray the crockpot with a non-stick cooking spray or use a crockpot liner.
  2. Add corn, cream cheese, sour cream, mayo, shredded cheeses, garlic, seasonings, and lime juice to the crockpot.
  3. Stir all ingredients together until well combined.
  4. Cover and cook on low for 2-3 hours, stirring occasionally until the dip is hot and bubbly.
  5. Stir in cilantro and cotija cheese (if using) just before serving.
  6. Serve warm with tortilla chips or fresh veggies.

Notes

  • You can partially drain the street corn cans to create a slightly milder version with lighter seasoning.
