Ingredients
- 1 1/4 lbs. boneless skinless chicken breasts
- 1 lb. sliced bacon, cut into thirds
- 2/3 cup firmly packed brown sugar
- 2 Tbsp. chili powder
- Toothpicks
Instructions
- Preheat the oven to 350 degrees.
- Cut chicken breasts into 1” cubes.
- Cut each bacon slice into thirds.
- Wrap each chicken cube in bacon and secure with a toothpick.
- Stir together brown sugar and chili powder.
- Dredge wrapped chicken in mixture.
- Coat a rack and broiler pan with nonstick cooking spray.
- Place chicken wrap on a rack in a broiler pan. Bake for 30-35 minutes or until bacon is crisp.
Notes
You can also bake in a regular 9″x13″ pan if you would like to marinate the chicken bites in the mixture more during cooking.
Storage & Reheating
- Store leftovers in an airtight container in the fridge for up to 3 days
- Reheat in the oven at 325°F for 10–15 minutes to keep bacon crispy
- Avoid microwaving if possible (it softens the bacon)
